Rustic Oat Cakes
1/2 cup water 1/2 cup raisins 1 tsp cinnamon 2 cups oats 1/2 cup flour 1/2 tsp salt 1/3 c butter or oil 1/3 c honey or maple syrup 1/2 lemon, rind and all 1 tsp vanilla optional: walnuts, dried cranberries. Simmer water, raisins and cinnamon for 5 min. Mix oats, flour and salt in large bowl. Puree in blender raisin mix, butter, honey, lemon, vanilla. Add puree to dry mix. Shape into "cookies" and bake at 375° for 15 min.

Lemon Garlic Chicken
juice of one lemon 1/2 c chicken stock 3 Tbsp olive oil 2 tsp raw garlic 2 tsp mustard 1 tsp each: salt, pepper, oregano, thyme Large package chicken thighs, placed in a cast iron skillet. Combine all marinade ingredients in a small bowl, then pour over chicken. Cook at 400° until the skin is crispy, typically 45-60 minutes. Optional: Marinate the chicken ahead of time for 2-4 hours.
