Lemon Garlic Chicken


  • juice of one lemon

  • 1/2 c chicken stock

  • 3 Tbsp olive oil

  • 2 tsp raw garlic

  • 2 tsp mustard

  • 1 tsp each: salt, pepper, oregano, thyme

  • Large package chicken thighs, placed in a cast iron skillet.


    Combine all marinade ingredients in a small bowl, then pour over chicken.


    Cook at 400° until the skin is crispy, typically 45-60 minutes. 


    Optional: Marinate the chicken ahead of time for 2-4 hours.
