Rustic Oat Cakes

  • 1/2 cup water

  • 1/2 cup raisins

  • 1 tsp cinnamon

  • 2 cups oats

  • 1/2 cup flour

  • 1/2 tsp salt

  • 1/3 c butter or oil

  • 1/3 c honey or maple syrup

  • 1/2 lemon, rind and all

  • 1 tsp vanilla

  • optional: walnuts, dried cranberries.


Simmer water, raisins and cinnamon for 5 min.


Mix oats, flour and salt in large bowl.


Puree in blender raisin mix, butter, honey, lemon, vanilla.


Add puree to dry mix.


Shape into "cookies" and bake at 375° for 15 min.
