Rustic Oat Cakes

1/2 cup water
1/2 cup raisins
1 tsp cinnamon
2 cups oats
1/2 cup flour
1/2 tsp salt
1/3 c butter or oil
1/3 c honey or maple syrup
1/2 lemon, rind and all
1 tsp vanilla
optional: walnuts, dried cranberries.
Simmer water, raisins and cinnamon for 5 min.
Mix oats, flour and salt in large bowl.
Puree in blender raisin mix, butter, honey, lemon, vanilla.
Add puree to dry mix.
Shape into "cookies" and bake at 375° for 15 min.
