Homestyle Meatloaf

Glaze
1/2 c ketchup
2 Tbsp brown sugar
4 tsp cider vinegar
Meat Loaf
1 onion, chopped
4 carrots, grated
3 celery stalks, chopped fine
2 cloves garlic
½ tsp dried thyme
1 tsp salt
½ tsp pepper
2 tsp mustard
2 tsp Worcestershire sauce
2 pounds grass fed beef, ground turkey or buffalo
For the glaze: mix all of the ingredients together and set aside
Use food processor or grater to mince onion, carrots, celery and garlic
Saute veggies until soft
In a large bowl, combine veggie mixture with remaining ingredients
Place meatloaf mix into center of 9x13 pan and shape into loaf shape; keeping meatloaf away from sides of pan to improve browning
Pour glaze over meatloaf
Bake loaf for 1 hour, or until internal temperature is 160 degrees
This is a great recipe to double and freeze!
